Oven Baked Potato Chips

I love potato chips, but I do not like the fat and calories.  I tried store-bought baked chips, however they are not as tasty as the fried kettle chips.  Here is a recipe I found a while back for Oven-baked chips.  Wow!  They are good.  I have to admit that there is work involved, but these oven-baked chips are sure worth it.

  • Slice two large russet potatoes into 1/8 inch rounds
  • Pat dry on paper towels
  • In a large bowl toss the potato slices in 2 tablespoons olive oil
  • arrange rounds in a single layer on non-stick foil line baking sheets
  • bake at 400 until browned and the potato edges lift slighty from the baking sheet
  • Remove from the Oven and sprinkle with salt.
  • Cool completely
  • store in an airtight container for up to one day.

    Have you ever tried making potato chips in the microwave? It was life changing for me! I swear I ate them for a couple of days after I tried it!
