Garlic Fried Rice With Tofu

Garlic Fried RiceWondering what to do with leftover rice?  Make your own Chinese take out!

Garlic Fried Rice with peas, carrots, tofu and egg!  Omit the egg if you are vegan.

Ingredients

  • Left over rice about  2-3 cups
  • 1 cup cubed firm tofu
  • 2 tbsp. olive or canola oil
  • 3 chopped garlic cloves
  • 1 tbsp. soy sauce
  • 1/4 cup frozen peas
  • 1/2 cup chopped fresh carrots
  • 1 egg

 

In a large wok or frying pan

  • Heat 1 tbsp olive or canola oil on low
  • Saute the cubed tofu until slightly brown add more oil if needed.
  •  add the garlic and chopped carrots and sauté with the tofu.
  • push the garlic, carrots and tofu to the side and add 1 egg to scramble
  • Add the rice, and mix to distribute ingredients.
  • Cook until the rice is warm and if needed add 1 tbsp. water
  • Add the soy sauce
  • Add the frozen peas
  • Stir the rice and veggies to mix well for 2-3 minutes.
  • Serve warm.

Individual Vegetarian Pot Pie

Recently while in a restaurant enjoying dinner,  I noticed someone eating a chicken pot pie at the next table and it sure did look delicious! As you know I am vegetarian, and chicken is not served in the bungalow, however it is a food I can replicate using tofu.  I was excited to make this in the kitchen and I do say it turned out quite good!  This recipe makes 4  individual pot pies.

Vegetarian Individual Pot pies

              Ingredients

1/2 tsp salt and 1/2 tsp of pepper
1 tablespoon olive oil
1 cup diced  potatoes
1 medium carrot, diced                                                                                                                                                                                                                                                                         1 small onion, chopped
2 cloves garlic, finely chopped
1 cup of soy milk
2 cups vegetable broth
1/2 cup water
1 1/2 teaspoons parsley flakes
2 cups of tofu chunks or strips
1 cup frozen sweet peas, thawed
1 package pie dough,thawed                                                                                                                                                                                                                                                                 1/2 cup all purpose flour

              Directions

Heat oven to 400°F. Lightly coat 4  individual baking dishes (ramekins) with cooking spray.

In saucepan, heat oil and cook potatoes, carrot, celery, onion and garlic over medium heat about 10 minutes, stirring occasionally, until vegetables are tender.

Stir in broth, soy milk, water, parsley, tofu and peas.

Heat to boiling stir in flour stirring constantly. Remove from heat and set aside.

Using a Ramekin Cut 4  circles from pie dough a little larger than the Ramekin

Place Ramekins on a cookie sheet. Divide  mixture evenly among ramekins. Top each ramekin with a circle of pie dough.

Bake 30 to 35 minutes or until pastry is puffed and golden brown. Cool 5 minutes before serving.

Eggless Egg Salad Sandwich

Are you allergic to eggs?  Do you miss eating or wish you could eat some of the yummy egg dishes that everybody else can eat.  One of my favorite eggless dishes is Eggless Egg Salad, substituted with tofu.  You will never taste the difference.  Give it a try and let me know what you think.

This Recipe Serves Four

1 package of Silken tofu

3 Tbsp eggless mayonnaise

1/8 tsp salt

1/8 tsp dry mustard

1/4 tsp turmeric

2 Tbsp minced onions

2 Tbsp minced celery

1/2 tsp minced  dill weed

1/8 tsp ground pepper

  • Drain tofu, crumble and lightly stir fry in an oiled pan
  • In large bow add the tofu and let cool for about 5 -10 minutes
  • In a small bowl , mix mayonnaise, salt, turmeric and mustard and add to the cooled tofu
  • Mix in the remaining ingredients
  • Refrigerate 30 minutes or longer
  • Serve on a roll or toasted bread with lettuce, tomato and/or onion

Broccoli Tofu Stir Fry

Here is a quick and easy dish to make when you are in a hurry to make dinner
Made with tofu, and broccoli with a hint of garlic.

Tofu Veggie Stir Fry

In a pan or wok lightly stir fry 2 cloves of garlic chopped
with tofu strips in olive oil until lightly browned
Add 2 cups broccoli cover and steam
Turn off burner and let sit for a few minutes
lightly season with salt and pepper.

Enjoy with your favorite beverage.  Red wine goes great with this dish.

Fried Sesame – Tofu Strips

These fried sesame tofu strips are so delicious, and you just cannot stop eating them until they are all gone.  No leftovers here.  I made these the other night and before I knew it they were all gone.  Yum! Give them a try and do  let me know what you think!  Dip them in a sauce, eat alone or squeeze just a bit of fresh lemon on them!

What you will need.

  • 1 block extra firm tofu
  • Sesame oil
  • 2 cloves garlic minced
  • Low salt soy sauce
  • Olive Oil
  • Fresh lemon
  • Gently press a block of super firm tofu between too clean towels to remove excess water. 
  • Cut the tofu into long strips
  • In a medium size bowl whisk 2 tbsp of olive oil, 2 garlic cloves minced, 1 tsp of sesame oil, and 1 tbsp of low salt soy sauce. 
  • Dip tofu strips to coat all sides.
  • Heat 2 tbsp of olive oil in fry pan
  • Cook tofu until crisp turning as needed
  • Add more oil as needed.
  • Let cool
  • squeeze fresh lemon on tofu strips and enjoy alone or with rice on the side.

Stir Fry Sesame Tofu and Rice

 Sesame Tofu and Rice is a favorite here st the Beach Bungalow.  It is light but filling and has enough carbs, protein and fiber for the following day’s  Gym Session!

Ahead of Time

  • Drain and rinse 1 1/2-ounce package of extra-firm tofu
  • Place the tofu on a cutting board, cover with a clean towel and press any extra water from the tofu
  • Cut tofu into ½ in cubes and set aside
  • In a bowl mix
  • 1 tsp sesame oil
  • 1 tsp canola oil
  • ¼ cup low salt soy sauce
  • ¼ cup orange juice
  • Add the tofu
  • 2 cloves of garlic finely chopped
  • 1/2 cup finely chopped onion
  • 1 cup of broccoli
  •  two large carrots sliced

Marinate in the refrigerator for 1 – 2 hours

  • Heat 1 tbsp oil in large skillet over med heat
  • Add marinated tofu to skillet; cook briefly stirring gently, until semi brown.
  • add vegetables to skillet, cook for 2 to 3 minutes.
  • Add marinated tofu and  mix to prepared rice.

Leftovers can be kept in the frige for a few days or frozen.

Susan T’s Easy Pasta and Tofu

Very Easy.

I love pasta and I love tofu!  So why not put them together in a quick and easy dish to enjoy with a glass of red wine!  My pantry is full of  all different types and shapes of pasta.  As you can see I used bow tie pasta, but you can use whatever shape you have on hand. In advance

Cut extra firm Tofu into small cubes

Marinate in

1 cup of Orange Juice, 1 clove chopped garlic,

1/2 cup chopped onions, and one tsp soy sauce in fridge for  1 hour or longer.

Next

In a large pan, stir fry marinated tofu in olive oil until golden.  Add more oil if needed

Set aside

Cook your pasta according to package directions

Drain pasta add to tofu mixture and toss. Add pepper and more olive oil if desired!

Can be enjoyed hot or cold.

Can be refrigerated for a couple of days.
